Neapolitan pizza

Neapolitan pizza is unlike any other. The pizzas are baked explosively at a high temperature for a short time, so that the toppings remain fresh and flavorful while the dough develops its characteristic bubbly leopard spots. We use our own sourdough recipe and let the dough rise for four days before baking it, so it gets the optimal taste and consistency that a pizza neapoletana should have.
